Add fresh parsley and mint, toss gently to distribute. 4. In a small jar, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. 5. Pour dressing over salad and toss to coat everything evenly. 6. Taste and adjust seasoning. Refrigerate 15-30 minutes for flavors to meld. 7. Serve chilled or at room temperature. Keeps well in the fridge for 3 days.
