Fold in dried cranberries, shredded coconut, and pumpkin seeds. 3. Refrigerate mixture for 20-30 minutes — it will firm up and become easier to roll. 4. Using your hands, roll mixture into 1-inch balls. You should get about 18-20 energy bites. 5. Place on a parchment-lined tray and refrigerate at least 30 minutes before serving. 6. Store in an airtight container in the refrigerator for up to 1 week. Perfect for on-the-go snacking or pre-workout fuel.
